Albuquerque: The Really Good Stuff

There’s something about the last day of a trip that lights a fire under your butt.  So with the sunrise, I sought to make the most of my last day in Albuquerque.

And that means I start with a good breakfast. Ok, a really good breakfast!  I headed to hotspot Tia B’s La Waffleria for their vegan option. 

Though they offer an option to build your waffle any way you darn please, I was already in love with the flavor profile of the Bombay Coconut, one of their sweet creations. It is a coconut and rice flour waffle drizzled with mango puree, topped with toasted coconut and smothered in cardamom-coconut whip.  Yeah, it’s for real.

A thing of beauty.  What a way to start the day?

I loved the waffle! It was packed with coconut shards. 

And just to keep things up to date here, I am posting a picture of the storefront of the taco spot I had a few days back, the waffle place’s sister restaurant: El Cotorro.

Because these tacos were so good. Let’s look at them again. This area is pretty cute… and it is very vegan-friendly!

See, the “v” bomb a bit down the road.  Didn’t try this place though.

I did hit V Roast, which has vegan breakfast options as well as vegan coffee concoctions.  Another “v” bomb…

I also went to Annapurna’s World Vegetarian Cafe the other day, which has several locations in Albuquerque. It’s Ayurvedic cuisine and I got the Chapati Rolls filled with your choice of butternut squash, kale, potatoes and cabbage, along with their sweet date tamarind chutney and spicy coconut chutney.

Remember the caramel apple donut from Rebel Donut?  It was glorious.

A must-do when you’re in the Albuquerque area: a quick drive east onto Route 333 in Tijeras and you get to hear your car sing America, The Beautiful… The rumble strips on the side of the road are set to the tune of the patriotic hymn! It was such a hoot and I must admit that I looped around 2 or 3 times to try to perfect the song. Take a listen!

Ok, back in Albuqueque, the historical Route 66 runs through the downtown and I just was smitten with all the vintage neon. So I took the occasion to stop and snap away and then fiddle with filters.

And finally, dinner at The Acre, and all-vegetarian but not all-vegan spot. I grabbed a take-out sammy though it looked perfectly pleasant in there.  I got the Comfort Club, a triple decker sandwich that was perfect in every way. It had carrot bacon, lettuce, tomato, avocado, green chile, and vegan chipotle mayo. Along with their housemade potato chips and garlicy pickles, it hit every note.
