Blue On Blue: Oat & Millet Blueberry Pancakes with Blue Beauty Protein

Like that annoying woman in Pulp Fiction, I wanted blueberry pancakes last night.Β  So I decided to tweak a recipe to include Moon Juice’s Blue Beauty Protein. And I wanted to use the way healthier oat and millet flours over all-purpose. They turned out great despite it being a first try.Β  Here is the recipe and my notes. . .

Millet was on my gluten-free ‘grain to try’ list and I was pleased with its flavor and texture.Β  Along with the oat flour, it had a pleasingly course texture, like cornmeal.Β  I added some of Blue Beauty Protein to up the nutritional game.Β  The pretty powder contains organic, sprouted brown rice protein, organic chia seeds, tocotrienols, blue spirulina extract, and organic stevia. It turned the batter a subtle blue-grey.

The pancakes cooked to a beautiful golden brown, but the thick batter required a bit more time and patience.Β  I would opt to make silver dollar-sized pancakes next time as the texture is far more crumbly than regular white flour pancakes.Β  That’s life in the gluten-free lane.

Dry:
1 cup millet flour
1/2 scant cup oat flour
2 Tablespoons Moon Juice Blue Beauty Protein
2 teaspoons baking powder
1/2 teaspoon cinnamon
pinch of salt
Blueberries, however many your heart desires

Wet:
2 ripe bananas
3/4 cup almond milk
2 Tablespoons melted coconut oil
1/2 teaspoon vanilla

1.) Heat a pan on the burner over low heat as you prepare all the ingredients. Watch that it doesn’t get too hot.
2.) Mix all of the dry in a large bowl and make a well in the center.
3.) Blend all wet ingredients in a blender and pour into the well of the dry, scraping sides down. Mix, but don’t over-mix. Add more almond milk if it’s too thick.
4.) Add some fat to the frying pan and raise the heat to low-medium.
5.) Pour a small amount of batter in the pan, spreading to a 3-4 inch diameter. It won’t bubble so much like usual pancakes. Watch the bottom, which will brown, to know when to flip.

Douse in maple syrup and Earth Balance.Β  Watch The Royal Tennebaums and laugh a lot at Eli Cash. Then watch the end of Goodfellas and then the beginning when they play it again right after.Β  Fall asleep.
