Breakfast is my superpower.

Breakfast is my superpower.

This powerful breakfast helps my morning person-ness. I make a batch of this on the weekend and divvy it up so it’s ready to bring to work. This is a revamped version of my usual chia oatmeal that incorporates new and exciting magical powders.

Chia Oatmeal Layer

2 cups Rolled oats
3 cups almond milk
1/2 cup chia seed

For serving:
Organic berries
Unsweetened organic shredded coconut

Cacao Buckwheat Porridge Layer
1.) Cover buckwheat groats with water in a bowl.  Soak for an hour to overnight at room temperature. The longer you soak the groats the smoother they will blend. After, dump into a strainer and rinse groats well as they’ll be a bit slimy, then put them in your blender.

2.) Add all ingredients and blend well, until incorporated and smooth. If mixture is too thick, add more almond milk. Divide the porridge up into your small to-go containers and store in the refrigerator while you prepare oatmeal layer.

3.) In a medium bowl, mash bananas until smooth.

4.) Add the remaining ingredients and stir well.  Cover and refrigerate overnight.

5.) Scoop oatmeal onto the top of the cacao buckwheat layer.

6.) Garnish with your desired toppings.
