Christmas Vegan Cookie Bake-a-thon

Sugar Cookies

These were certainly the most time consuming. Usingย this recipe from blogger couple John & Kristie I churned out 36 glorious evergreens, doused them with the sweet almond icing and dipped them into a pool of nonpareils. Sweet sugar overload! And just in time as one of 2009’s food goals focuses on the sweet granule.
Ginger Bread Cookies
I used the ton of leftover gingerbread dough I had from my attempt at constructing a gingerbread house to roll out a tons of gingerbread hearts. (I said “gingerbread” three times in that sentence!) These perfect ginger-nibbles were topped with coconut.

Oatmeal Cookies
If I had to pick a cookie that did not meet my standards, it would be these. I got a bit overzealous with this simple oatmeal recipe by throwing the kitchen sink in: dried apricots, currants, raisins, as well as chopped walnut. The batter was a bit Better Off Dead-“You Like Raisins”-esque. Considering I didn’t put many in my recipients cookie boxes… so now I have plenty left over.
Chocolate Peppermint Cookies
I used VCON‘s chocolate-chocolate chip recipe to create the batter for these beauties but I was out of sugar! I decided to use the Ahlaksa hot chocolate mix that had been in my cupboard for years. It was basically all sugar and cocoa powder anyway. I also added ground up CandyPenny-grounded candy cane for peppermint flavor and sugar.
Banana Muffin Cookies
I’ve blogged about this recipe like a million times. My banana muffins. I wanted them to be part of the festivities so I baked little dollops of the delicious batter to create these bite-size cake cookies. How wonderful! However I fear the banana aroma will overtake the other cookies when they’re boxed.
Chocolate Chip Cookies
Another recipe I’ve blogged about. ย No cookie assortment is complete without my favorite, the standard chocolate chip cookie. No bells or whistles just cookie perfection. I am a no-frills cookie connoisseur and prefer a good ol’ chocolate chip cookie to a green tea-rosewater-cardamon jammed-thumbprint, or other such complicated cookie combo, any day.
And there you have it! The gift of cookie.

Merry Christmas to you and yours!
