Creamy Cauliflower Horseradish Soup
Though it doesn’t seem like soup weather this weekend, I made A Virtual Vegan‘s Creamy Cauliflower Horseradish Soup for the week. I made one small tweak–cooking the onion and garlic up with the thyme in the pan till nice and flavorful instead of stewing all ingredients right off the bat.
And oh, how I love using the immersion blender.
Instead of the usual Gold’s horseradish, I went for A Virtual Vegan‘s recommendation: Atomic from Morehouse. It was deliciously assertive, like I should try to be more often. 😊 But next time I’d used the real root which has cleared my sinus potently and with unequal substitution. But it’s not always around when this little piggy goes to market.
Garnished it to the nines: I upped the protein level with some tofu cubes and turned over some produce that was sitting around: asparagus (roasted it first), green onion, and cilantro.
