Easy Vegan Red Velvet Pancakes

1.5 cups unsweetened soy milk, less 1.5 TB
1.5 TB apple cider vinegar
0.5 cup whole wheat flour
0.75 all-purpose flour
0.75 cup granulated sugar
2 TB cocoa powder
1.5 tsp baking powder
0.25 tsp baking soda
0.25 tsp salt
Vegan red food coloring
In a small bowl, whisk together soy milk and vinegar and set aside to curdle.
In a medium mixing bowl, place all dry ingredients.
Make a well in the center and pour in soy milk and food coloring.
Stir together with a fork until well combined.
Grill em up with some vegan butter and garnish how you see fit. ( I did coconut cream, strawberries and mini chocolate chips.)
