Happy Mother’s Day

I get my beautiful brown bangs from mom, as evident in this picture of my Mom and her twin brother on trike patrol.

On her day, my mother requested a chocolate cake with vanilla icing. So that is what she got. I used Chloe’s Celebration Cake recipe (from Chloe’s Vegan Desserts), as opposed to my usual VCTOTW basic chocolate cupcake recipe. I don’t think the cupcake recipe translates as well for a full cake.  

For the frosting, I tried Spectrum shortening for the first time ever and was very pleased with the texture. And I was on my way!
