Summer Dinners

Lazy summer days–besides a ton of chopping vegetables. Who wants to cook in the summer? Fresh, chilled dinners are best in the heat. Like this salad of jicama, cucumber, tomato, and red pepper.

And raw kale with some black beans for protein. I massage ’em with ginger oil, toasted sesame oil, agave and apple cider vinegar because I did not want to avoid the kale pile as I sometimes do.

Of course, you always need bread. Lightly oiled and grilled. Perfection.

Ah, summer bruschetta. And some hummus for the rest of of the bunch of cilantro… and pesto with basil from the garden. Let’s hear it for 9-10 servings of vegetables in one meal!
