These Are a Few of My Favorite Things: Beets

I got this *huge* organic loose beet at Fairway this morning. It’s about as big as a coconut. Maybe bigger. Check the quarter for scale. This is an eBay trick that does not do the enormousness of the beet justice. I’ll use my head for scale later.

With some olive oil, some pepper and a foil dress, the beet roasted in 500 degree temps for over an hour. I bet I can eat this whole thing in one sitting. 

I’d much rather savor it throughout the week at work.  

It’s got rings like a tree trunk. I will be eating them all–the beet’s history in my belly.
